Chicken thighs: For juicy flavor, I love using bone-in, skin-on chicken thighs. They stay tender while cooking and add a rich, savory note to the dish. The skin crisps up beautifully, enhancing both flavor and presentation.

Lemon juice: Fresh-squeezed lemon juice brightens the flavors and cuts through the richness of the chicken. It’s a must for a refreshing finish that ties everything together beautifully.

Olive oil: I use quality olive oil for the marinade, which adds depth and helps everything stay moist during baking. Its rich flavor complements the chicken and vegetables effortlessly.

Spike Seasoning: This versatile seasoning blend works wonders to enhance the overall flavor without needing a whole spice cabinet. A sprinkle is all you need!

Italian Seasoning: A sprinkle of Italian seasoning brings the dish together with an aromatic flair. It complements the chicken and asparagus while adding a delightful warmth.

Asparagus: Fresh asparagus not only tastes great but also adds a vibrant pop of color and crisp texture. Perfectly roasted, it balances both the chicken and the marinade flavors, making every bite a treat.

Cooking Tips and Notes

Creating the perfect Sheet Pan Chicken Thighs and Asparagus dinner can feel like an art form, especially when you want that blend of crispy, juicy, and beautifully roasted flavors. Here are some friendly tips to guide you through the process:

Choosing Your Chicken Thighs

Opt for bone-in, skin-on chicken thighs. They provide incredible flavor and moisture, ensuring you won’t end up with dry pieces. For a healthier alternative, you can remove the skin before baking, but you might lose some of that delicious juiciness.

Asparagus Prep

When selecting asparagus, look for firm stalks that are bright green. Trim the woody ends by holding the stalk and bending it gently; it will naturally snap where the tough part ends. Attempt to keep the asparagus pieces uniform in size for even cooking.

Season Like a Pro

Don’t be shy with your seasoning! Besides salt and pepper, consider adding garlic powder, onion powder, or even a sprinkle of paprika to elevate the taste. Marinades can also be a game-changer; let your chicken soak in a mixture of olive oil, lemon juice, and herbs for a few hours before roasting for deeper flavor.

Oven Magic

Ensure your oven is preheated properly before you place your sheet pan inside. This will help achieve that beautiful caramelization and crispiness on your chicken and veggies.

Timing is Everything

Keep an eye on both your chicken and asparagus as they cook. Add the asparagus to the sheet pan about halfway through the chicken’s cooking time to ensure they stay tender-crisp without overcooking.

With these tips in mind, you’ll create a fabulous Sheet Pan Chicken Thighs and Asparagus dish that will impress not just your taste buds but also anyone sharing your meal! Enjoy your cooking adventure!

Serving Suggestions

Pairing your delightful Sheet Pan Chicken Thighs and Asparagus with the right sides can elevate your meal to a whole new level. Here are a few ideas that bring out the flavors and create a balanced plate:

  • Grains: Serving your chicken and asparagus alongside a bed of fluffy quinoa or brown rice can add a nutty taste and complete the dish with whole grains. You might even consider a wild rice medley for a touch of earthy flavor.

  • Salads: A fresh green salad with tangy vinaigrette brings brightness to the meal. The crispness of arugula or spinach perfectly balances the tender chicken.

  • Bread: Don’t overlook a warm loaf of crusty bread to soak up the juices from the pan. A slice of garlic bread or even a hearty sourdough adds a nice touch.

  • Wine Pairing: Enjoy a crisp white wine, like a Sauvignon Blanc, which complements the savory notes of the chicken and the brightness of the asparagus.

Experimenting with these options can turn a simple weeknight dinner into an impressive feast, all while keeping it simple and enjoyable!

Description

Delicious and easy-to-make sheet pan recipe featuring juicy chicken thighs and tender asparagus with a zesty marinade.

Ingredients

Scale
  • 8 large bone-in, skin-on chicken thighs
  • 1/2 cup fresh-squeezed lemon juice
  • 1/3 cup olive oil
  • 1 tablespoon Spike Seasoning
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder
  • 1 pound asparagus spears
  • 1 lemon, for zesting
  • salt and fresh ground black pepper to taste

Instructions

  1. Trim the chicken thighs well, removing excess skin and the pockets of fat on the back side; I use kitchen shears for this.
  2. Whisk together olive oil, lemon juice, Spike, Italian Herb Seasoning, Onion Powder, and Garlic Powder to make the marinade.
  3. Put trimmed chicken into a Ziploc bag and pour in about 2/3 of the marinade. Seal bag and let chicken marinate in the fridge for at least 2-3 hours (or longer will be great, even all day while you’re at work).
  4. When you’re ready to cook chicken, preheat oven to 350F/176C (with the sheet pan placed inside) while you drain chicken in a colander until it’s well drained and comes to room temperature. (Catch the excess marinade and discard.)
  5. Arrange chicken on hot sheet pan and bake for 25 minutes.
  6. While chicken cooks, break one piece of asparagus to see where the woody part starts and trim all asparagus to that size, then cut each piece of asparagus in half on the diagonal.
  7. Zest a lemon and then whisk one tablespoon of the zest into the reserved marinade.
  8. Remove sheet pan from the oven and increase temperature to 450F/232C.
  9. Check to see if liquid has been released from the chicken. If it has, use a wadded up paper towel to blot away excess liquid.
  10. Tuck asparagus pieces around the chicken, making sure it’s in a single layer as much as possible. Brush reserved marinade on the chicken and asparagus.
  11. Put sheet pan back in the oven and bake for 4-6 minutes or slightly longer depending on how thick the asparagus is and how crisp you prefer your asparagus.
  12. Then turn oven to broil and broil the chicken and asparagus for about 3 minutes, or until the top of the chicken is nicely browned and asparagus is getting slightly charred. (Watch it carefully!)
  13. Season Sheet Pan Chicken Thighs and Asparagus with salt and fresh-ground black pepper as desired and serve hot.

Notes

  • We used extra-large chicken thighs. If you only find small thighs, the baking time will be a bit shorter.
  • You can squeeze the lemon after zesting and freeze the juice and also freeze the extra lemon zest if you have some.
