Key Ingredients for Air Fryer Fish Sticks
Fish: When preparing air fryer fish sticks, the best choice is white fish like cod or haddock. These fish are firm, flaky, and hold up beautifully during cooking. Plus, they have a mild flavor that pairs perfectly with a variety of seasonings.
Breadcrumbs: I always opt for panko breadcrumbs for that delightful crunch. They give the fish sticks a crispy texture without the need for deep frying. If you’re looking to change things up, try seasoned breadcrumbs for an extra flavor kick!
Eggs: They act as a binding agent in this recipe. Coating your fish fillets in a simple beaten egg mixture helps the breadcrumbs stick, ensuring each bite is perfectly crispy.
Herbs and Spices: A mix of garlic powder, paprika, and a touch of salt elevates the flavor of these air fryer fish sticks. You can customize it by adding your favorite spices, like cayenne for heat or dill for freshness.
Oil: A light spray of cooking oil before air frying helps create that golden, crispy exterior. Less is more when it comes to oil, but don’t skip it; it’s key for achieving perfection!

Tips for Making Perfect Air Fryer Fish Sticks
Crafting air fryer fish sticks can be a delightful culinary experience, especially when you know a few key tips to elevate the flavors and optimize the texture. Let’s dive into some secrets that will ensure your homemade fish sticks turn out perfectly crispy and delicious every time.
Choose the Right Fish
Selecting the right type of fish is essential. I recommend using firm white fish such as cod or tilapia. They hold their shape well during cooking and have a mild flavor that pairs beautifully with breading. Fresh fish is ideal, but frozen fish works too—just make sure to thaw it thoroughly beforehand.
Master the Breading Technique
A well-executed breading process is key to achieving that coveted crunch. Start by patting your fish dry to ensure the coating adheres properly. Dredge them in seasoned flour, dip in beaten eggs, and then coat with breadcrumbs or panko for an extra crunch. Consider adding spices to the breadcrumb mixture for added flavor.
Optimal Cooking Time and Temperature
Cooking at the right temperature is crucial for achieving that golden-brown exterior. Preheat your air fryer to around 400°F (200°C) and place the fish sticks in a single layer to allow maximum air circulation. Avoid overcrowding the basket so they cook evenly; you’ll likely need to batch-cook if you’re making a large quantity.
Serve Immediately
For the best experience, serve your fish sticks right out of the air fryer. This ensures they remain crispy. Pair them with a tangy dipping sauce or fresh lemon wedges to enhance their flavors even further!
With these tips, your journey to the perfect air fryer fish sticks will be smooth and enjoyable. Happy cooking!

Air Fryer Fish Sticks
- Total Time: 27 minutes
- Yield: 4 servings 1x
- Diet: Gluten-Free
Description
Delicious Air Fryer Fish Sticks made with cod, halibut, or other thick white fish, coated in almond flour and cooked to perfection.
Ingredients
- 4 pieces cod, halibut, or other thick white fish fillets
- 2 eggs, well beaten
- 1 cup almond flour
- 2 tsp. Fish Rub
- 1/4 tsp. freshly-ground black pepper
- Tartar Sauce for serving (We loved this with my Double-Dill Homemade Tartar Sauce)
Instructions
- Thaw the cod, halibut, or other thick white fish pieces overnight in the fridge if frozen. Then drain fish well and pat dry with paper towels.
- Cut fish crosswise into short strips about 1 inch wide. We got 16 strips from four fish fillets, but if your Air Fryer is a smaller model you might not be able to cook that much at once.
- Prepare two bowls, one with beaten eggs and the other with a mixture of the almond flour, Fish Rub, and a little freshly-ground black pepper.
- Set Air Fryer to 390F/200 C. Preheat the air fryer if needed. We sprayed the Air Fryer basket with non-stick spray.
- When you’re ready to cook, dip each piece of fish first into the egg and then into the almond flour mixture, sprinkling almond flour over with your fingers so the fish is lightly coated. Lay the fish sticks in the Air Fryer basket as you coat them.
- Cook the fish 10-12 minutes, starting to check after about 7-8 minutes to see if you need to rotate the fish. At 10 minutes check to see if you need a bit more time.
- Fish is done when it feels firm to the touch and is lightly browned on the outside.
- Serve the Air Fryer Fish Sticks hot, with Tartar Sauce or your favorite dipping sauce.
- If this makes more than you’ll eat at one time, just refrigerate the extra fish and reheat in the Air Fryer.
- Bake them at 475F/245C for about 15-20 minutes if you want to cook the fish sticks in the oven.
Notes
- Use only thick white fish fillets for best results.
- Adjust the cooking time based on the size of your Air Fryer and fish strips.
