Description

Delicious homemade blackberry rolls with a sweet glaze.


Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 cup warm milk (110°F)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 2 cups fresh or frozen blackberries
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice

Instructions

  1. Prepare the Dough: In a mixing bowl, combine warm milk, sugar, and yeast; let sit for 5 minutes. Add melted butter and eggs. Gradually mix in flour until soft dough forms.
  2. Knead: Transfer dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  3. First Rise: Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled.
  4. Create Filling: Mash blackberries with sugar and lemon juice in a separate bowl.
  5. Roll and Fill: Roll out dough into a rectangle. Spread blackberry mixture evenly over the dough and roll tightly from one edge.
  6. Slice & Bake: Cut rolls into 1-inch pieces and place in a greased baking dish. Let rise for another 30 minutes while preheating oven to 375°F (190°C). Bake for 25-30 minutes until golden brown.

Notes

  • For best results, use fresh blackberries. If using frozen, make sure to thaw and drain excess liquid.
  • The dough can be made the night before and kept in the fridge to rise slowly.
