Description

These chewy oatmeal cookies are the perfect treat for any occasion. Soft, flavorful, and packed with oats!


Ingredients

  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups rolled oats

Instructions

  1. Cream the butter and sugars: In a large bowl, use a hand or stand mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This step builds the base of that chewy texture we’re after.
  2. Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract. You’ll notice the batter becoming creamier and more cohesive.
  3. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Slowly add the dry mixture to the wet ingredients, mixing until just combined. Avoid overmixing to keep your cookies soft.
  4. Stir in the oats: Add the rolled oats and stir them in by hand. At this point, you can also fold in optional extras like raisins, chocolate chips, or chopped nuts if you’d like.
  5. Chill the dough (optional but recommended): For thicker cookies with more chew, chill the dough in the fridge for 30 minutes to 1 hour. This helps prevent spreading and enhances the flavor.
  6. Bake to perfection: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop the dough into rounded tablespoons and place them about 2 inches apart on the sheets. Bake for 10–12 minutes, or until the edges are golden and the centers look just slightly underdone.
  7. Cool and enjoy: Let the cookies cool on the pan for 5 minutes before transferring to a wire rack. They’ll continue to set as they cool — and trust me, they’re even better the next day.
