Description

Delicious and nutritious muffins made with cottage cheese and packed with frozen berries.


Ingredients

Scale
  • 1 muffin tin, greased with nonstick cooking spray
  • 1 cup cottage cheese
  • 3 large eggs
  • 1 cup (96g) rolled oats
  • 1/4 cup milk
  • 1/4 cup maple syrup
  • 2 teaspoons ground cinnamon
  • 1 2/3 cups frozen berries, divided

Instructions

  1. Grease a 12-cup muffin tin with nonstick cooking spray.
  2. In a large bowl, combine the cottage cheese, eggs, oats, milk, maple syrup, and cinnamon. Stir in half of the frozen berries.
  3. Divide the mixture between the greased muffin tin cups, filling each with about 1/4 cup of batter. Top with remaining berries.
  4. Bake the muffins until the edges are lightly golden and the tops are set, 25 to 27 minutes.
  5. Let cool in the tin for 10 minutes, then use a small spatula to remove to a wire rack to cool completely. Serve.
  6. Store leftovers covered or in an airtight container in the refrigerator for up to 5 days.

Notes

  • For added sweetness, you can sprinkle some brown sugar on top before baking.
  • These muffins freeze well for up to 3 months. Reheat in the microwave or oven.
