Delicious and nutritious muffins made with cottage cheese and packed with frozen berries.
Ingredients

- 1 muffin tin, greased with nonstick cooking spray
- 1 cup cottage cheese
- 3 large eggs
- 1 cup (96g) rolled oats
- 1/4 cup milk
- 1/4 cup maple syrup
- 2 teaspoons ground cinnamon
- 1 2/3 cups frozen berries, divided
Instructions
- Grease a 12-cup muffin tin with nonstick cooking spray.
- In a large bowl, combine the cottage cheese, eggs, oats, milk, maple syrup, and cinnamon. Stir in half of the frozen berries.
- Divide the mixture between the greased muffin tin cups, filling each with about 1/4 cup of batter. Top with remaining berries.
- Bake the muffins until the edges are lightly golden and the tops are set, 25 to 27 minutes.
- Let cool in the tin for 10 minutes, then use a small spatula to remove to a wire rack to cool completely. Serve.
- Store leftovers covered or in an airtight container in the refrigerator for up to 5 days.
Notes
- For added sweetness, you can sprinkle some brown sugar on top before baking.
- These muffins freeze well for up to 3 months. Reheat in the microwave or oven.
