Ingredients

- 1 medium green cabbage, chopped
- 1 bell pepper (any color), sliced
- 2 medium carrots, julienned
- 1 yellow onion, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons toasted sesame oil
- Fresh cilantro (optional)
Instructions
- Wash and chop all vegetables: cabbage, bell pepper, carrots, and onion.
- Heat sesame oil in a large skillet or wok over medium-high heat until shimmering.
- Add minced garlic and grated ginger; sauté for 30 seconds until fragrant.
- Stir in cabbage, bell pepper, carrots, and onion; cook for 5-7 minutes until tender-crisp.
- Drizzle soy sauce over the vegetables and stir-fry for another minute.
- Remove from heat; garnish with cilantro if desired and serve hot over rice or noodles.
Notes
- This stir-fry is versatile and can include other vegetables like broccoli, snap peas, or zucchini.
