A delicious and healthy ground turkey zucchini casserole that’s easy to make!

- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1 can (14 oz) diced tomatoes, drained
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil to prevent sticking and ensure easy cleanup.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, cooking until fragrant and translucent, about 2 minutes.
- Add the ground turkey to the skillet and cook, breaking it up with a spoon, until it is browned and no longer pink, about 5-6 minutes.
- Stir in drained diced tomatoes, dried Italian herbs, salt, and black pepper. Let the mixture simmer gently for 3-4 minutes to blend flavors.
- In the prepared baking dish, layer half of the sliced zucchini evenly. Spread half of the turkey and tomato mixture on top, then sprinkle with half of the shredded mozzarella cheese. Repeat these layers with the remaining zucchini, turkey mixture, and cheese.
- Place the dish in the oven and bake uncovered for 30-35 minutes, until the casserole is hot, bubbly, and the cheese has melted to a golden brown.
- Remove from the oven and let cool for 5 minutes before serving to allow the casserole to set slightly for easier slicing.
Notes
- For a crispier topping, add more cheese in the last 10 minutes of baking.
