Description

A delicious peach cake perfect for any occasion.


Ingredients

  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped peaches (fresh, canned, or thawed frozen)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking pan.
  2. Cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Alternate adding dry ingredients and milk to the wet mix until combined.
  6. Fold in chopped peaches gently.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 40–45 minutes or until a toothpick comes out clean.
  9. Let cool completely before glazing.
  10. Mix powdered sugar, milk, and vanilla for glaze; drizzle over cooled cake.
