Cheddar Mushroom Puff Pastry Bites

Description

Delicious puff pastry bites filled with sautéed cremini mushrooms and sharp white cheddar cheese.


Ingredients

Scale
  • 17 oz (2 sheets) puff pastry
  • 2 tbsp olive oil for cooking
  • 16 oz cremini mushrooms
  • 1 medium yellow onion
  • 6 garlic cloves
  • 12 oz sharp white cheddar cheese (preferably block)
  • coarse kosher salt (to taste)
  • black pepper (to taste)

Instructions

  1. Thaw pastry sheets and lay them on a large cutting board.
  2. Preheat oven to 400℉ and grease a standard muffin pan (24-cup muffin pan or 2 of the 12-cup muffin pans).
  3. Preheat a large cooking pan over medium-high heat and add some oil.
  4. Dice onion, mushrooms, and mince the garlic. Grate the cheese on a large side of the box grater and add it to a mixing bowl.
  5. Add diced mushrooms to the pan and sauté until golden brown. Make a little well in the center and add garlic. Sauté until garlic is fragrant, just a few seconds.
  6. Add diced mushrooms to the pan and mix well. Sauté over medium heat until done softened. Season with some salt and pepper and mix well. Finish sautéing until all liquid is cooked off. Take off heat.
  7. Let mushrooms cool a little bit and then mix it with grated white cheddar cheese. Make sure to mix well. Set aside.
  8. Roll puff pastry a little bit (just a little) and cut the sheets into 9 equal squares each.
  9. Place each square into the muffin cup, forming a little cup out of the pastry square.
  10. Fill each pastry square with about 2 – 2½ tablespoons of mushroom cheese mixture.
  11. Bake for 15-17 minutes, until pastry is golden-brown.

Notes

  • Make sure the muffin pan is well-greased to prevent sticking.
  • You can customize the filling by adding herbs or other vegetables.
