Description

A delicious side dish featuring carrots glazed with orange juice, brown sugar, and butter.


Ingredients

Scale
  • 2 pounds fresh carrots (sliced)
  • 2 Tablespoons butter
  • ¼ cup orange juice
  • 2 Tablespoons brown sugar
  • 2 Tablespoons fresh parsley (finely chopped)

Instructions

  1. Place an inch of water in a saucepan and add carrots.
  2. Bring to a boil then reduce heat to low and cover with a lid. Let simmer for 8-10 minutes or until the carrots are tender.
  3. Drain the water when the carrots are done cooking and set aside.
  4. In another saucepan over medium heat, melt butter.
  5. Whisk in orange juice and brown sugar.
  6. Fold in carrots and parsley and stir until carrots are evenly coated in glaze.
  7. Cook over medium heat for 2-3 minutes until the glaze thickens slightly.

Notes

  • This dish can be served warm or at room temperature.
  • Adjust sweetness by adding more or less brown sugar according to your taste.
