Ingredients

  • 8 oz rotini pasta
  • 1 lb boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 1 cup fresh basil leaves, chopped
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper; sauté for about 6-7 minutes per side until cooked through. Let cool slightly before dicing.
  3. In a large bowl, combine cooked pasta, diced chicken, cherry tomatoes, mozzarella balls, and basil.
  4. Drizzle with balsamic vinegar and olive oil; toss gently to combine. Season with salt and pepper to taste.
  5. Serve immediately or chill in the refrigerator for at least 30 minutes for best flavor.
