A delicious and fresh rotini pasta salad with chicken, cherry tomatoes, and mozzarella.
Ingredients

- 8 oz rotini pasta
- 1 lb boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella balls
- 1 cup fresh basil leaves, chopped
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water until al dente (8-10 minutes). Drain and set aside.
- In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper; sauté for about 6-7 minutes per side until cooked through. Let cool slightly before dicing.
- In a large bowl, combine cooked pasta, diced chicken, cherry tomatoes, mozzarella balls, and basil.
- Drizzle with balsamic vinegar and olive oil; toss gently to combine. Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for at least 30 minutes for best flavor.
Notes
- For a vegetarian option, omit the chicken and add more vegetables.
- This salad can be made ahead of time for meal prep.
