- 1 pound Boneless Chicken Thighs
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt
- to taste Pepper
- 8 pieces Corn Tortillas
- 2 pieces Ripe Avocados
- 1 tablespoon Limes
- 1 small White Onion
- 1/4 cup Fresh Cilantro
- 1/2 cup Queso Fresco Cheese
Instructions
- Begin by seasoning the boneless chicken thighs with chili powder, cumin, paprika, salt, and pepper. Allow to marinate for at least 15 minutes.
- While the chicken marinates, mash the ripe avocados in a bowl with fresh lime juice and a pinch of salt to create a creamy guacamole.
- Heat a skillet over medium heat and cook the marinated chicken for 6-8 minutes on each side until charred and cooked through.
- In the same skillet, heat the corn tortillas for about 30 seconds per side until pliable and slightly charred.
- Slice the cooked chicken into strips and place into warmed tortillas. Top with guacamole, onions, cilantro, and cheese.
Notes
- Boneless chicken thighs can be substituted with chicken breasts.
- Fresh cilantro can be swapped with parsley.
- Choose fresh, ripe avocados for the best flavor.
