Description

Delicious and fluffy pancakes with a sweet cinnamon sugar topping.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • Additional butter or oil for cooking
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until evenly mixed.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until fully incorporated.
  3. Pour the wet mixture into the dry ingredients and gently stir until just combined, leaving the batter slightly lumpy without overmixing.
  4. Heat a non-stick griddle or skillet over medium heat and lightly grease with butter or oil to prevent sticking.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  6. Carefully flip each pancake and cook the other side until golden brown, approximately 2-3 minutes more.
  7. While the pancakes cook, mix granulated sugar and cinnamon in a small bowl.
  8. Once pancakes are cooked, immediately sprinkle them with the cinnamon sugar mixture while still warm to help it adhere.
  9. Serve warm with extra butter, maple syrup, or your favorite pancake toppings.

Notes

  • For extra flavor, add chocolate chips or fruit to the batter before cooking.
  • If the batter is too thick, add a little more milk to reach the desired consistency.
