- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- Additional butter or oil for cooking
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until evenly mixed.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until fully incorporated.
- Pour the wet mixture into the dry ingredients and gently stir until just combined, leaving the batter slightly lumpy without overmixing.
- Heat a non-stick griddle or skillet over medium heat and lightly grease with butter or oil to prevent sticking.
- Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Carefully flip each pancake and cook the other side until golden brown, approximately 2-3 minutes more.
- While the pancakes cook, mix granulated sugar and cinnamon in a small bowl.
- Once pancakes are cooked, immediately sprinkle them with the cinnamon sugar mixture while still warm to help it adhere.
- Serve warm with extra butter, maple syrup, or your favorite pancake toppings.
Notes
- For extra flavor, add chocolate chips or fruit to the batter before cooking.
- If the batter is too thick, add a little more milk to reach the desired consistency.
