This delicious stir-fried dish of rice noodles with a creamy peanut sauce and fresh veggies is a quick and easy meal perfect for any night.

- 8 oz rice noodles
- 2 tbsp Sriracha sauce
- 3 tbsp smooth peanut butter
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 3 green onions, chopped
- 2 tbsp lime juice (freshly squeezed)
- ¼ cup chopped peanuts (toasted)
- Fresh cilantro (optional)
Instructions
- Boil the Noodles: Bring a large pot of water to a boil. Cook rice noodles for about 4-6 minutes until tender yet chewy. Drain and set aside.
- Prepare the Sauce: In a bowl, mix Sriracha sauce, peanut butter, lime juice, and a splash of water until smooth and creamy.
- Sauté the Veggies: Heat oil in a large skillet over medium heat. Add bell peppers and carrots; sauté for 3-4 minutes until slightly softened.
- Combine Noodles & Sauce: Add drained noodles to the skillet with the sautéed veggies. Pour the sauce over everything and toss gently until well coated.
- Garnish & Serve: Remove from heat and top with chopped peanuts and cilantro (if using). Serve hot with extra lime wedges on the side.
Notes
- Feel free to add any other vegetables you have on hand.
- This dish can be made gluten-free by using rice noodles labeled as GF.
- Adjust the amount of Sriracha to suit your spice preference.
