Air Fryer Roasted Vegetables

Description

Delicious roasted vegetables made in an air fryer, tossed with fresh dressing.


Ingredients

Scale
  • 8 oz cherry tomatoes (halved)
  • 2 cups zucchini (chopped)
  • 1 cup red onion (sliced)
  • 3 tbsp minced garlic
  • 2 small bell peppers (color of your choice, seeds removed, cubed)
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 pinch salt and pepper
  • 1/2 cup olives (halved)
  • 2 tbsp parsley (fresh, chopped)
  • 3 tbsp olive oil
  • 1/4 large lemon (fresh, squeezed)
  • 1 pinch salt (to taste)

Instructions

  1. Preheat air fryer to 400 degrees F for 5 minutes.
  2. In a large mixing bowl, add halved cherry tomatoes, zucchini, onions, garlic, bell peppers, 2 tbsp olive oil, Italian seasoning, salt and pepper.
  3. Mix all together. Transfer in the air fryer basket and air fry for 10-12 minutes. Shake the basket every 4 minutes or so.
  4. Remove roasted vegetables and add to a large salad bowl.
  5. Whisk together dressing (3 tbsp olive oil, 1/4 lemon juice, and salt) and pour on top.
  6. Toss together and serve.
  7. You could cook penne pasta separately and fold that in; if you do add noodles, you will want to double the amount of dressing so everything is coated well.

Notes

  • For additional flavor, consider adding grilled chicken or feta cheese.
