Description

A quick and delicious stir-fry featuring chicken, vegetables, and fresh basil.


Ingredients

Scale
  • 2 tablespoons avocado oil
  • 2 pounds chicken breast (cut into 1″ pieces)
  • 1 cup red onion (cut into 1/2″ pieces)
  • 1 cup red pepper (cut into 1/2″ pieces)
  • 2 tablespoons garlic (minced)
  • 1/2 cup soy sauce
  • 1/4 cup light brown sugar
  • 1 cup basil leaves (chopped)

Instructions

  1. Heat the oil in a heavy skillet or wok over high heat.
  2. Add the chicken and stir for 2-3 minutes, or until it is golden on the outside and the juices run clear on the inside.
  3. Stir in the onions, peppers, and garlic. Cook until fragrant—about 1 more minute.
  4. Pour in the soy sauce and brown sugar and continue to cook until the sauce begins to glaze onto the meat—about 1-2 more minutes.
  5. Stir in the basil leaves and cook until the chicken is completely cooked through, the basil is wilted, and the liquid has mostly evaporated.
  6. Serve warm with rice. Enjoy!

Notes

  • For best flavor, use fresh basil.
  • This dish pairs well with jasmine rice.
