  • 4 tablespoons chili oil (homemade or store-bought)
  • 2 tablespoons olive oil (main cooking fat)
  • 1 teaspoon salt (enhances flavor)
  • 1/4 cup parmesan cheese (optional, omit for dairy-free)
  • 1/4 cup fresh herbs (chopped basil or parsley for garnish)

Instructions

  1. In a small saucepan, gently heat olive oil over medium heat. Add minced garlic and chili flakes, cooking until the garlic turns golden brown, then remove from heat to let the flavors infuse.
  2. In a large skillet, sauté sliced onions in a generous drizzle of olive oil. Sprinkle with a pinch of salt and cook over medium-low heat for about 20 minutes, stirring occasionally until they become soft, golden brown, and jammy.
  3. Bring a pot of salted water to a boil. Add your preferred pasta and cook according to the package instructions. Remember to reserve a cup of pasta water before draining!
  4. Once the onions are caramelized, add the infused garlic from the chili oil to the skillet and cook for an additional 1-2 minutes. Then, toss in the drained pasta, mixing well to coat the noodles with the onion goodness.
  5. Slowly add the reserved pasta water, a little at a time, until the mixture reaches a silky consistency. Drizzle the infused chili oil over the pasta and toss to ensure everything is evenly coated.
