Description

A flavorful bowl filled with harissa-seasoned chicken, fresh vegetables, and a rich tahini sauce.


Ingredients

Scale
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp harissa paste
  • 1 tbsp honey
  • 1 tbsp lemon zest
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • pinch of sea salt
  • 1/4 cup tahini
  • 2 tbsp maple syrup
  • 1 tbsp lemon juice
  • 2 garlic cloves
  • 1/8 tsp sea salt
  • 23 cold water *more as needed
  • 1 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced (or use pickled red onions!)
  • 1/2 cup grape tomatoes, halved
  • hummus
  • microgreens (optional but SO nutrient dense!)

Instructions

  1. In a bowl, toss chicken with olive oil, garlic powder, smoked paprika, cumin, sea salt, and lemon juice to taste.
  2. Cook the chicken in the air fryer at 370-degrees for 10 minutes. Flip and cook for an additional 4-8 minutes, until the internal temperature reaches 160-degrees. Tent with foil for 5 minutes before serving.
  3. Thinly slice the cucumbers and onions.
  4. Chop the tomatoes.
  5. Blend tahini, maple syrup, garlic cloves, and lemon juice with cold water until smooth. Adjust as needed.
  6. Layer hummus at the bottom of your bowl, followed by rice or quinoa as desired.
  7. Top with sliced chicken, cucumber, tomatoes, and red onion. Garnish with microgreens if desired.
