Description
A flavorful bowl filled with harissa-seasoned chicken, fresh vegetables, and a rich tahini sauce.
Ingredients

- 2 chicken breasts
- 2 tbsp olive oil
- 2 tbsp harissa paste
- 1 tbsp honey
- 1 tbsp lemon zest
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- pinch of sea salt
- 1/4 cup tahini
- 2 tbsp maple syrup
- 1 tbsp lemon juice
- 2 garlic cloves
- 1/8 tsp sea salt
- 2–3 cold water *more as needed
- 1 cucumber, thinly sliced
- 1/2 red onion, thinly sliced (or use pickled red onions!)
- 1/2 cup grape tomatoes, halved
- hummus
- microgreens (optional but SO nutrient dense!)
Instructions
- In a bowl, toss chicken with olive oil, garlic powder, smoked paprika, cumin, sea salt, and lemon juice to taste.
- Cook the chicken in the air fryer at 370-degrees for 10 minutes. Flip and cook for an additional 4-8 minutes, until the internal temperature reaches 160-degrees. Tent with foil for 5 minutes before serving.
- Thinly slice the cucumbers and onions.
- Chop the tomatoes.
- Blend tahini, maple syrup, garlic cloves, and lemon juice with cold water until smooth. Adjust as needed.
- Layer hummus at the bottom of your bowl, followed by rice or quinoa as desired.
- Top with sliced chicken, cucumber, tomatoes, and red onion. Garnish with microgreens if desired.
