Description

These delicious chocolate chip oat bars are perfect for a quick snack or breakfast option.


Ingredients

  • 1 ½ cup rolled oats (quick-cook or old-fashioned)
  • ½ cup whole wheat flour (or all-purpose)
  • ½ teaspoon baking soda
  • 1 pinch kosher salt
  • ⅓ cup plain Greek yogurt
  • ⅓ cup coconut oil (melted and cooled)
  • ⅓ cup maple syrup
  • 1 large egg (whisked)
  • 2 teaspoons vanilla extract
  • ⅔ cup chocolate chips

Instructions

  1. Preheat oven to 350℉ (175℃). Line an 8×8 pan with parchment paper or grease well with cooking spray or oil.
  2. In a large mixing bowl, mix together the flour, oats, baking soda, and salt together. Add in the chocolate chips and toss to coat.
  3. Add the whisked egg, oil, yogurt, maple syrup, and vanilla to the oat mixture and fold together until the ingredients are just combined. The batter will be thick.
  4. Dollop the batter into the prepared pan, and carefully spread out the batter evenly in the pan.
  5. Bake for 20-22 minutes or until set and slightly golden.
  6. Remove the bars from the oven and place them on a cooling rack for 10-15 minutes. Remove the bars from the pan using the parchment paper and cool completely. Cut into bars and enjoy.
