Description

A delicious and healthy baked dish packed with vegetables and cheese.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 small zucchinis, thinly sliced into half moons
  • 1 cup fresh spinach, chopped
  • 4 large eggs
  • 1 1/2 cups cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh basil or parsley for garnish (optional)
  • Butter or oil for greasing the baking dish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and garlic, cook until fragrant.
  2. Add bell peppers and cook until they begin to soften. Add zucchini and sauté until tender.
  3. Stir in spinach and cook until wilted. Remove from heat and let cool slightly.
  4. In a large bowl, whisk eggs with cottage cheese, mozzarella, Parmesan, salt, pepper, oregano, and crushed red pepper flakes.
  5. Grease a 9×13-inch baking dish. Layer half the sautéed veggies, pour half the cheese mixture. Repeat with the remaining veggies and cheese mix.
  6. Smooth the top with a spatula.
  7. Bake at 375°F (190°C) for 35–40 minutes or until golden and set.
  8. Let rest for 10 minutes before slicing. Garnish with basil or parsley if desired.

  • This dish can be served warm or at room temperature.
  • Great for meal prep, can be stored in the refrigerator for several days.
