Ingredients

- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 small zucchinis, thinly sliced into half moons
- 1 cup fresh spinach, chopped
- 4 large eggs
- 1 1/2 cups cottage cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon sea salt
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- Fresh basil or parsley for garnish (optional)
- Butter or oil for greasing the baking dish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onions and garlic, cook until fragrant.
- Add bell peppers and cook until they begin to soften. Add zucchini and sauté until tender.
- Stir in spinach and cook until wilted. Remove from heat and let cool slightly.
- In a large bowl, whisk eggs with cottage cheese, mozzarella, Parmesan, salt, pepper, oregano, and crushed red pepper flakes.
- Grease a 9×13-inch baking dish. Layer half the sautéed veggies, pour half the cheese mixture. Repeat with the remaining veggies and cheese mix.
- Smooth the top with a spatula.
- Bake at 375°F (190°C) for 35–40 minutes or until golden and set.
- Let rest for 10 minutes before slicing. Garnish with basil or parsley if desired.
Notes
- This dish can be served warm or at room temperature.
- Great for meal prep, can be stored in the refrigerator for several days.
