Description
A delicious treat made with medjool dates, peanut butter, and semi-sweet chocolate.
Ingredients

- 28 medjool dates (pitted)
- 1 cup peanut butter (chunky or creamy)
- 1 cup semi-sweet chocolate chips (melted)
Instructions
- Line a baking pan with parchment paper.
- Slice each date the long way without cutting it all the way through and place it face down on the baking sheet.
- Spread the peanut butter evenly overtop of the dates. You can heat the peanut butter in the microwave dish for about 15 seconds to help it smooth easier if you’d like.
- Place the chocolate chips in a microwave-safe bowl and microwave for 30 seconds on 60% power level. Stir and repeat for another 30 seconds on 60% power level. Then stir again. You can heat for a 3rd time for 30 seconds on 60% power level if you need to but the dish is sometimes warm enough to keep melting the chips as you stir. Be very careful not to overheat the chocolate or it will seize and not be pourable.
- Pour the melted chocolate evenly over the peanut butter layer. Sprinkle sea salt or chopped peanuts over the chocolate.
- Place in the freezer for 30 minutes to chill and set.
- Remove from the freezer and slice into small pieces.
