Description

Delicious and easy peanut butter cookies made with simple ingredients.


Ingredients

Scale
  • 1 cup natural peanut butter
  • 1 cup cane sugar or coconut sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
  • Chocolate chunks (I used Enjoy Life Mega Chunks)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix the peanut butter, sugar, egg, vanilla, and baking soda until well combined.
  3. Scoop 1 Tablespoon of the cookie dough, roll into a ball, and set about 1 inch apart onto ungreased baking sheets.
  4. Bake for 9-10 minutes.
  5. Remove from oven and immediately press a chocolate chunk into each cookie.
  6. Allow to cool completely. The chocolate will harden as it cools.

Notes

  • Regular peanut butter can be used instead of natural peanut butter.
  • A flax egg can be used instead of a large egg.
