Ingredients

Scale
  • 56 fillets mahi mahi
  • 2 large lemons
  • 1 small red onion (sliced)
  • 1 tbsp parsley
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 tsp thyme
  • 3 tbsp butter
  • Salt to taste
  • Pepper to taste
  • Chili flakes to taste (optional)
  • Olives to taste (optional)

Instructions

  1. Lightly oil a baking pan and set aside.
  2. Use a paper towel to pat the fish dry.
  3. In a small bowl, mix together minced garlic, thyme, and parsley. Set aside.
  4. Slice the lemons and thinly slice the red onion into rings.
  5. Lay lemon slices on the baking pan.
  6. Place fish on top of lemon slices, with each fillet having 2 slices underneath.
  7. Top each fillet with a pinch of salt, pepper, and optional chili flakes for heat.
  8. Spread the parsley mixture on top of the fillets.
  9. Top each fillet with two thinly sliced pieces of butter.
  10. Layer sliced olives and sliced onions on the fillets if desired.
  11. Bake at 375°F for 15-20 minutes or until the center of the fillet is flaky and cooked thoroughly.
  12. The insides should be white and not grey (if there is grey on any areas, it means you cooked it too long).
