A delicious and easy recipe for garlic parmesan chicken served with baby potatoes, perfect for a weeknight dinner.

- 4 boneless, skinless chicken breasts
- 6 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 4 tbsp extra virgin olive oil
- 1 lb baby potatoes, halved
- 2 tsp dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Spray a large baking dish with nonstick cooking spray.
- Pat the chicken breasts dry and season generously with salt, pepper, and half of the dried herbs.
- In a bowl, mix minced garlic, olive oil, Parmesan cheese, and remaining herbs.
- Place seasoned chicken in the baking dish; arrange halved potatoes around them.
- Drizzle the garlic-Parmesan mixture over the chicken and potatoes.
- Bake for 25–30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.

- This dish pairs well with a fresh salad or steamed vegetables.
- For extra flavor, marinate the chicken in the garlic mixture for a few hours before cooking.
