Instructions
- Begin by seasoning the chicken pieces lightly with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
- Lower the heat and stir in peanut butter, coconut milk, soy sauce, honey, and lime juice. Cook until smooth and slightly thickened.
- Add the seasoned chicken to the skillet, ensuring it’s well-coated in the sauce. Cook for approximately 8-10 minutes or until the chicken is cooked through.
- Sprinkle red pepper flakes before serving. Enjoy over rice or noodles!
