This cheesy kielbasa and potato casserole is a hearty and delicious meal perfect for the whole family.

- 3 cups peeled and diced russet potatoes
- 14 oz kielbasa sausage, sliced
- 1 cup chopped yellow onion
- 1 can (10 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 2 cups shredded cheddar cheese, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Peel and dice the potatoes into bite-sized chunks.
- Slice kielbasa into 1/2-inch rounds and chop the onion.
- In a large skillet over medium heat, sauté kielbasa slices until lightly browned, about 3-4 minutes.
- Add onions to the skillet and cook until soft and translucent.
- In a mixing bowl, stir together the cream of chicken soup, sour cream, milk, garlic powder, black pepper, and 1 1/2 cups of cheddar cheese.
- In a greased 9×13-inch baking dish, combine diced potatoes, cooked sausage, and onions.
- Pour the cheese mixture over the top and gently stir to combine.
- Cover with foil and bake for 50–60 minutes, until potatoes are fork-tender.
- Remove foil, top with remaining cheese, and bake uncovered for 10–15 minutes until bubbly and golden.
- Let rest 5–10 minutes before serving.
- Garnish with chopped parsley, if desired.
