Description

This creamy garlic mashed potato soup is a comforting and delicious way to use up leftover mashed potatoes.


Ingredients

  • 2 ½ cups leftover garlic mashed potatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 ½ to 3 cups chicken or vegetable broth
  • 1 cup whole milk or cream
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh thyme or parsley

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5–7 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the mashed potatoes and stir well to combine with the onions and garlic.
  4. Gradually pour in the broth, stirring constantly to break up the mashed potatoes and create a smooth consistency.
  5. Once the soup starts to simmer, add the milk or cream and continue to stir. Simmer for 5–10 minutes.
  6. Lower the heat and stir in the shredded cheddar cheese until melted and fully incorporated.
  7. Season with salt and pepper to taste.
  8. Optional: Blend with an immersion blender for a smoother texture.
  9. Ladle into bowls and garnish with extra cheese and fresh herbs. Serve hot.

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a thinner soup, add more broth or milk to reach your desired consistency.
