This creamy garlic mashed potato soup is a comforting and delicious way to use up leftover mashed potatoes.

- 2 ½ cups leftover garlic mashed potatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 ½ to 3 cups chicken or vegetable broth
- 1 cup whole milk or cream
- 1 cup shredded cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh thyme or parsley
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5–7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the mashed potatoes and stir well to combine with the onions and garlic.
- Gradually pour in the broth, stirring constantly to break up the mashed potatoes and create a smooth consistency.
- Once the soup starts to simmer, add the milk or cream and continue to stir. Simmer for 5–10 minutes.
- Lower the heat and stir in the shredded cheddar cheese until melted and fully incorporated.
- Season with salt and pepper to taste.
- Optional: Blend with an immersion blender for a smoother texture.
- Ladle into bowls and garnish with extra cheese and fresh herbs. Serve hot.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a thinner soup, add more broth or milk to reach your desired consistency.
