Tortellini with Italian Sausages and Peppers

Description

A delicious and hearty dish combining tortellini, Italian sausages, and fresh vegetables.


Ingredients

Scale
  • 2 Italian sausages (sliced)
  • 2 bell peppers (I used orange & red)
  • 3 cloves garlic (minced)
  • 1 (14 fluid ounce) can diced tomatoes (with juices)
  • 2 dashes Italian seasoning
  • 1 cup water
  • 1 (21 ounce) package tortellini
  • 6 leaves fresh basil (torn)
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Cook sausages for 7-10 minutes (or until browned all over) in a deep skillet on medium heat. Meanwhile, chop the peppers.
  2. Add the peppers to the skillet and cook for 5 minutes, stirring occasionally. Add the garlic and cook for 1 minute.
  3. Add the diced tomatoes, Italian seasoning, and water. Scrape the bottom of the pan.
  4. Add the tortellini to the pan and stir until it’s mostly covered by the sauce. Cover the pan with the lid slightly ajar, and cook for 5-7 minutes, stirring once halfway through.
  5. Remove lid and cook for another 5 minutes or until the sauce is thickened as desired. Stir in the fresh basil and parmesan cheese. Serve immediately.

Notes

  • For added flavor, try using sweet Italian sausage.
  • Feel free to substitute the tortellini with your favorite pasta.
