Description

A comforting and flavorful slow cooker chuck roast with French onion flavors, perfect for a family dinner.


Ingredients

  • 3 to 4 pounds chuck roast
  • 2 large yellow onions, thinly sliced
  • 2 cups beef broth
  • 1 packet French onion soup mix
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 4 sprigs fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup shredded Gruyère cheese (optional)

Instructions

  1. Pat the chuck roast dry with paper towels and season it on all sides with salt and black pepper.
  2. Heat a skillet over medium-high heat and sear the roast for 2 to 3 minutes per side until browned, if desired.
  3. Spread the sliced onions in the bottom of the slow cooker and add the garlic, butter, and thyme.
  4. Place the roast on top of the onions.
  5. Pour in the beef broth, then sprinkle the French onion soup mix over the roast and add the Worcestershire sauce.
  6. Cover and cook on low for 8 to 9 hours or on high for 5 to 6 hours, until the beef is fork-tender.
  7. Remove the roast carefully and transfer it to a platter.
  8. Whisk together the cornstarch and water in a small bowl, then stir it into the hot liquid in the slow cooker to thicken the gravy.
  9. Spoon the onions and gravy over the roast.
  10. Top with shredded Gruyère cheese if using, and let it melt before serving.
