Description

A delicious and creamy spinach and cheese bake that’s perfect for breakfast or brunch.


Ingredients

  • 8 large eggs
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup milk
  • 5 cups fresh spinach
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh parsley or basil, chopped

Instructions

  1. Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.
  2. Warm the olive oil in a skillet over medium heat, then cook the garlic for about 30 seconds until fragrant.
  3. Add the spinach and cook until wilted, then let any extra moisture cook off.
  4. In a large bowl, whisk the eggs, milk, salt, black pepper, and crushed red pepper flakes until smooth.
  5. Fold in the ricotta, mozzarella, and Parmesan, leaving small creamy pockets of ricotta.
  6. Stir in the cooked spinach mixture and sliced green onions.
  7. Pour the mixture into the prepared baking dish and smooth the top.
  8. Bake for 30 to 35 minutes, until the center is set and the top has light golden spots.
  9. Let the bake rest for 10 minutes before slicing.
  10. Garnish with fresh parsley or basil and serve warm.
