- 8 large eggs
- 1 cup whole milk ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- 1/3 cup milk
- 5 cups fresh spinach
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons fresh parsley or basil, chopped
Instructions
- Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.
- Warm the olive oil in a skillet over medium heat, then cook the garlic for about 30 seconds until fragrant.
- Add the spinach and cook until wilted, then let any extra moisture cook off.
- In a large bowl, whisk the eggs, milk, salt, black pepper, and crushed red pepper flakes until smooth.
- Fold in the ricotta, mozzarella, and Parmesan, leaving small creamy pockets of ricotta.
- Stir in the cooked spinach mixture and sliced green onions.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 30 to 35 minutes, until the center is set and the top has light golden spots.
- Let the bake rest for 10 minutes before slicing.
- Garnish with fresh parsley or basil and serve warm.
Notes
- For extra flavor, try adding other herbs like thyme or oregano.
- This dish can be made ahead of time and reheated when ready to serve.
