Delicious and crispy strawberry cheesecake tacos filled with a creamy strawberry filling.

- 2 tablespoons butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 8 small flour tortillas
- 8 ounces cream cheese, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, diced
- 16 golden sandwich cookies, crushed
- 3 tablespoons strawberry gelatin mix
- 1/4 cup freeze-dried strawberries, crushed
Instructions
- Preheat the oven to 375°F and prepare two oven rack bars or taco molds for shaping the tortillas.
- Stir together the granulated sugar and cinnamon in a shallow bowl.
- Brush both sides of each tortilla with melted butter, then coat each one in the cinnamon-sugar mixture.
- Drape the tortillas over oven rack bars or place them in taco molds and bake for 8 to 10 minutes, until crisp and lightly golden.
- Let the taco shells cool completely before filling.
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract, then beat again until fully combined.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- In another bowl, combine the crushed golden sandwich cookies, strawberry gelatin mix, and crushed freeze-dried strawberries.
- Spoon or pipe the cheesecake filling into the cooled taco shells.
- Top each taco with diced fresh strawberries.
- Sprinkle the strawberry crunch mixture generously over the filling.
- Serve immediately for the crispiest texture, or chill briefly before serving.
Notes
- These tacos are best served immediately while the shells are still crispy.
- Chilling them may soften the taco shells slightly.
