Description

Delicious cookies made with toffee bits, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped toffee bits
  • 1/2 cup optional: chocolate chips or chopped pecans

Instructions

  1. Beat the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet mixture.
  5. Fold in chopped toffee bits and any optional add-ins.
  6. Divide dough in half, shape into logs, wrap, and refrigerate for at least 3 hours.
  7. Preheat oven to 350°F (175°C). Slice logs into 1/4-inch thick rounds.
  8. Bake on a lined sheet for 10-12 minutes or until edges are golden.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • For softer cookies, do not bake too long.
  • Feel free to mix in dried fruits for added flavor.
