Description

This delicious tomato sandwich features a creamy Parmesan spread topped with fresh tomato slices.


Ingredients

  • 2 large slices whole-wheat sandwich bread (lightly toasted)
  • 4 slices large tomato (about 1/4-inch)
  • 1/4 cup mayonnaise (lite works)
  • 23 tablespoons Parmesan cheese
  • 1 small fresh clove garlic (minced)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon anchovy paste

Instructions

  1. In a small bowl, combine all of the ingredients for the spread: mayonnaise, Parmesan cheese, garlic, Dijon mustard, and anchovy paste. Taste and adjust flavorings as preferred, adding salt and pepper, if needed. You can make a big batch and refrigerate it for up to three days.
  2. Spread the mixture evenly on one side of each slice of toasted whole-wheat sandwich bread.
  3. Top with the tomato slices, then close the sandwich.
  4. Cut and serve immediately.
