A delicious and creamy soup featuring Italian sausage, cheese tortellini, and fresh spinach.

- 1 tablespoon olive oil
- 1 pound mild Italian sausage
- 1 small yellow onion, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can 28 ounces crushed tomatoes
- 5 cups low-sodium chicken broth
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 20 ounces refrigerated cheese tortellini
- 1 cup heavy cream
- 3 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil or parsley, chopped
Instructions
- Warm the olive oil in a large soup pot over medium heat, then add the Italian sausage and cook until browned, breaking it apart with a spoon.
- Add the onion, carrots, and celery, then cook for about 5 minutes until the vegetables begin to soften.
- Stir in the garlic and cook for 30 seconds, just until fragrant.
- Add the tomato paste and stir it into the sausage and vegetables for 1 minute to deepen the flavor.
- Pour in the crushed tomatoes and chicken broth, then add the Italian seasoning, crushed red pepper flakes, salt, and black pepper.
- Bring the soup to a gentle boil, reduce the heat, and simmer for 12 to 15 minutes until the vegetables are tender.
- Add the cheese tortellini and cook according to the package directions, usually 3 to 6 minutes for refrigerated tortellini.
- Lower the heat and stir in the heavy cream, spinach, and Parmesan cheese until the spinach wilts and the broth turns creamy.
- Taste and adjust seasoning if needed, then serve hot with fresh basil or parsley on top.
Notes
- This soup can be refrigerated for up to 3 days and makes great leftovers.
- Feel free to substitute fresh herbs with dried herbs if fresh is not available.
- Add additional vegetables like bell peppers or zucchini for more variety.
