Description

A delicious and creamy soup featuring Italian sausage, cheese tortellini, and fresh spinach.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound mild Italian sausage
  • 1 small yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can 28 ounces crushed tomatoes
  • 5 cups low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 20 ounces refrigerated cheese tortellini
  • 1 cup heavy cream
  • 3 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Warm the olive oil in a large soup pot over medium heat, then add the Italian sausage and cook until browned, breaking it apart with a spoon.
  2. Add the onion, carrots, and celery, then cook for about 5 minutes until the vegetables begin to soften.
  3. Stir in the garlic and cook for 30 seconds, just until fragrant.
  4. Add the tomato paste and stir it into the sausage and vegetables for 1 minute to deepen the flavor.
  5. Pour in the crushed tomatoes and chicken broth, then add the Italian seasoning, crushed red pepper flakes, salt, and black pepper.
  6. Bring the soup to a gentle boil, reduce the heat, and simmer for 12 to 15 minutes until the vegetables are tender.
  7. Add the cheese tortellini and cook according to the package directions, usually 3 to 6 minutes for refrigerated tortellini.
  8. Lower the heat and stir in the heavy cream, spinach, and Parmesan cheese until the spinach wilts and the broth turns creamy.
  9. Taste and adjust seasoning if needed, then serve hot with fresh basil or parsley on top.

Notes

  • This soup can be refrigerated for up to 3 days and makes great leftovers.
  • Feel free to substitute fresh herbs with dried herbs if fresh is not available.
  • Add additional vegetables like bell peppers or zucchini for more variety.
